Happy Easter!

Happy Easter!

I’m on my last day off from a 4-day long weekend. Very overdue. I’ve been working too much, and the nature of the non-stop grind with AI agents leaves me wanting no stimulation on my off-time. I just want to sit and watch something calm and stress-free, like Martijn Doolaard eating breakfast or shovelling out his chicken coop or sorting the rocks out of dirt soil on YouTube. Hopefully this weekend and the change in weather will help me reset my work/life balance again.

I went for a nice hike on Thursday afternoon. Our temperatures are rising and soon the snow piles will be melting!

The 9th Ave trail is in great shape!

Look at all the snow piled up in the snow dump between the dog park and town!

I think our street may be one of the last streets in town to get stripped. All the side streets around us are done now.

Jeff’s birthday was on Friday. I made an apple rhubarb strudel for his cake (his choice!) and we went out to BonTon for a fancy supper! Here was the menu for this weekend:

Here’s Jeff with his fancy espresso martini:

And me with a Dim and Stormy mocktail:

We picked 5 of the plates to share. We probably could have been fine to share just 4, but it is always fun to try their fancy platings. Almost entirely Yukon grown and produced ingredients too!

The chicken croquettes were my favourite!

I didn’t read the small print closely enough to see that the fingerling potatoes would be served covered in egg, so I had to scrape that yucky egg off (oh you know me and eggs – I don’t like ’em!)

Jeff’s favourite was the chorizo and bean stew. It was a bit too spicy for me but I liked it. There were massive white beans in among the chick peas. The server said they were German lima beans! They were good!

My second favourite was the carrot ricotta crepes. Really delicious spinach ricotta mix inside. Similar to a layer of a vegetarian lasagna.

The roast pork and cabbage plate was served last, and we were stuffed! It was so moist and full of flavour.

We skipped dessert so we could have some of the strudel I made, with some vanilla ice cream, after a several-hour digestion delay. Delicious!

On Saturday we had Alex, Kyle, Ags, and Cerys over for an Easter dinner. Jeff cooked a ham and scalloped potatoes.

Alex brought two delicious side dishes, full of flavour and spice.

Here we are!

Look at the dessert platter that Ags brought!!

Amazing spread!

Today (Sunday), Jeff’s been working at the camper, trying to get it propped up so he can switch out the brackets for the front legs. They need to be replaced with swing-out brackets now to fit around the hips of a dually.

Later today we’re going to our friend’s place for some crokinole games and a bbq!

It’s above zero today, and mostly cloudy now, but when the sun was shining, it heated the roof enough for the snow on the south side to slide off! YAY!

Update: We’re back from that delicious barbeque and more snow has slid from the house roof. It’s so loud and thundering!

Back to work for me in the morning. Jeff has another day off, and more camper prep lined up.
